How to Make the Perfect Egg Fried Rice

Instructions:

1. Heat a wok or a large frying pan over medium-high heat. Add the vegetable oil and swirl it around to coat the surface.

2. If you're using any protein like chicken, shrimp, or ham, stir-fry it for a couple of minutes until it's cooked through. Remove the protein from the pan and set it aside.

3. In the same pan, add the beaten eggs and scramble them until they're fully cooked. Remove the scrambled eggs from the pan and set them aside.

4. Add the mixed vegetables to the pan and stir-fry them until they're tender. This usually takes about 3-4 minutes.

5. Add the cooked rice to the pan and break up any clumps with a spatula. Stir-fry the rice and vegetables together for a couple of minutes until they're well combined.

6. Add the soy sauce and oyster sauce (if using) to the pan and stir-fry for another minute to evenly distribute the sauces.

7. Return the cooked protein and scrambled eggs to the pan. Stir-fry everything together for a final minute, ensuring that the ingredients are well mixed.

8. If desired, drizzle sesame oil over the fried rice and season with salt and pepper to taste. Give it a final stir.

9. Remove the pan from heat and garnish the fried rice with chopped green onions, if desired.
